Chef John Wolff brings to the Thistle Lodge nearly a decade of knowledge and creativity from his previous positions with upscale luxury resorts. He has a talent for improving the quality and consistency of the various lunch, dinner and brunch selections served, as well as special event and catered selections while remaining true to the food people have cherished for years.
"One of the things that drew me to this place was the tradition of the Sanibel style," Wolff said. "I'm highly cognizant of the past, of the things that have been done here for a long time, the things that people come back for. We will continue to refine the elegance and the quality that people have come to respect over the years."
For John, elegance is straightforward, classic. He doesn't rely heavily on garnish or frill, letting flavor wow the guests. It's the best way for Wolff to maintain the traditional elegance while leaving his own mark. "I tend to be a little more simplistic, a little more classic. I let the food speak for itself. The simpler the plate, the better," Wolff said.
